Kid-Approved Pesto

Pesto is a great dish to make with kids! This no-cook recipe is simple enough for even your youngest chefs. They will get to be involved and have an end result that tastes delicious.

This was my kiddos' first try at their own pesto and they were super excited about it. We weren't sure if we wanted to make a parsley or basil pesto but when we went to the supermarket, the basil smelled the best to my aspiring chefs. So basil pesto it was!

Once we got back home I gathered all the ingredients and kitchen tools we would need while my munchkins took turns washing their hands and getting their aprons on.

We had a lot of fun making this recipe and I would encourage you to try it with your little ones!

2 bunches of fresh basil

4 garlic cloves, peeled

1/4 cup of toasted pine nuts

1/2 cup of grated Parmesan cheese

1/4-1/2 cup of olive oil

salt to taste

1. Wash and dry the basil. Remove all of the leaves. Set the stems aside for the compost.

2. With adult supervision, add all ingredients EXCEPT the olive oil to the food processor. Begin to process the ingredients.

3. While food processor is working, slowly add in the olive oil until your pesto reaches the desired consistency.

4. Taste and adjust flavors if necessary.

5. Serve with pasta, over eggs or on your favorite bread!

We hope you enjoy this simple and delicious recipe!

**Always have lots and lots of adult supervision, especially when using sharp objects like knives and peelers or dangerous tools like food processors, blenders, etc.**

Amazing Crockpot Shredded Beef

If you are like me, you don't always have tons of time to spend in the kitchen preparing dinner. Between my children's packed schedules and my own busy life, sometimes it is a scramble at dinner time to get something on the table that is both quick and healthy.

That is why the crockpot is my best friend. Nothing brings me peace of mind on a busy day like knowing I already threw something (lovingly, of course) into my crockpot and that dinner will be ready when I get home.

This is one of those recipes. It is Called Amazing Crockpot Shredded Beef. "Amazing" because it is so easy to prepare AND because everyone in my house will gobble it up, no complaints. It is a huge hit with my mob.

Depending on the size of your crew, this recipe could give you dinner and some leftovers for later in the week. (A real dream come true for this busy mom!)

What could you do with a crockpot full of shredded beef?

  • yummy beef tacos
  • add it to your salad
  • top your sweet potato with a big scoop
  • serve it with a plate full of your favorite roasted veggies
  • filling for lettuce cups
  • serve over a whole grain pilaf

This is a pretty versatile dish and I am sure that you have some creative ways to use it as well... so don't be shy about sharing!

Here is what I do to create Amazing Crockpot Shredded Beef...

3 lb under blade chuck beef

2-3 yellow onions

1 head of garlic, peeled

1/2 cup beef broth

1 tbsp coconut aminos

1-2 splashes of Red Boat fish sauce

salt & pepper

  1. Place beef in crock pot. Add beef broth and then rest of the ingredients on top of the beef.
  2. Cover the crockpot and set on low. Cook for 6-8 hours, until the beef easily shreds.
  3. Serve over veggies, rice, quinoa, in tacos or any ol' way you choose!

And enjoy!

Simple enough, right?

My Girls' Hummus

My Girls' Hummus

I never considered myself a true lover of hummus....... until now. After trying a few store-bought varieties that I could take or leave, I didn't have a strong feeling one way or the other about hummus.

That was until I put together a very simple, kid-friendly recipe with my girls.  Thanks to these two very special ladies in my life I have a whole new love for hummus. Now I can not get enough of this healthy and delicious dish! The best part is that neither can my kids!

After seeing something on TV that suggested hummus was a healthy snack, my girls asked to make some themselves! They love to cook and we had so much fun putting this together. After a few tries, we figured out a simple and truly delicious hummus recipe that we love and want to share with you! We hope you and your little ones make this and enjoy!

My Girls' Hummus

Prep time: 5 mins

Cook time: 5 mins

Total time: 10 mins

  • 2 15 ounce cans of chick peas, drained and liquid reserved
  • juice from half a lemon
  • 3 garlic cloves, smashed
  • 2 Tbsp of olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt (I used Himalayan Pink salt)

Put all ingredients except for the reserved liquid from the chickpeas into the blender.

  1. Begin blending ingredients and slowly add in some of the reserved liquid until the hummus is of a desired consistency.
  2. Add in your own flavors like roasted red peppers or jalapeños. (optional)
  3. Garnish with paprika.
  4. Place hummus in a bowl and enjoy with all of your favorite cut veggies or traditional pita!
  5. I found that if I want a plate of raw veggies to disappear very quickly, I just need to put out a bowl of the Girls' Hummus next to it! If you give it a try I would LOVE to hear how it goes!

Just a few notes about the ingredients:

  • I recommend high quality olive oil since much of the flavor is derived form the oil.
  • I always recommend using organic ingredients when possible.
  • If using canned beans, use beans that come in BPA free lined cans.
