Homemade Pickles

In this house WE LOVE PICKLES! 

We love them so much that a few years ago we started making our own. 

It is simple enough to do. Plus, we are in control of the healthy ingredients we use and the kids can help ... so why not! 


Here is how we make 'em.


Into a large (24 ounce) mason jar we shove:

3 big kirbie cucumbers, sliced

1 small onion, chunked

3-4 garlic scapes, chunked

Your mason jar should be full.


In a sauces pan, we heat up:

1 1/2 cups of white vinegar

1/2 teaspoon of salt

3/4 cup of sugar (1 cup if you like them sweeter) 

1/2 teaspoon turmeric

1 teaspoon yellow mustard seeds 


What we do then:

We heat the saucepan ingredients until sugar dissolves, about 5 minutes. Then we pour the vinegar mixture over vegetables in the canning jar. We leave the jar unopened on the counter until it cools to room temperature. Then we cover the jar and place it in the fridge.

Unfortunately we have to wait 24 hours before they are ready but then we devour them!

Healthy Strawberry Kiwi Ice Pops

Summer is here!

It is time for lots of refreshing frozen treats.

Am I right?

If you are a little bit like me, you have a love of ice cream that could easily get out of control...

...if you let it. 

To avoid my own likely overindulgence, I try to keep really healthy frozen treat options around for not only myself but the kids as well. Frozen yogurt pops, frozen grapes and, of course, some simple homemade ice pops. 

The kiddos and I love to create our own healthy ice pops right at home. We choose our own ingredients so we know our ice pops are good for us.


I make this simple and nutritious ice pop recipe using my Zuko ice pop molds. We use just a few whole foods as our main ingredients and it literally only takes a couple minutes to prepare. The hardest part about this recipe is waiting for them to freeze. 



Healthy Strawberry Kiwi Ice Pops



1 1/2 cups of chopped strawberries and kiwi

3/4 cup of coconut water

2-3 Tbsp of honey

3-4 leaves of fresh mint



  1. Place all ingredients in your blender and puree.
  2. Pour your pureed ingredients into your ice pop molds. 
  3. Secure the tops and place your closed ice pop molds in the freezer for at least 8 hours. 
  4. To enjoy your frozen ice pops, run individual pops under warm water for 30-60 seconds to remove cover. 
  5. Eat up and stay cool!
